And since I had the ingredients from the popsicles, I made halibut with Thai green curry and coconut lime rice for dinner. Yes, I used real coconut milk! Spent a pile of points on that but it was delicious.

It was very good and easy! I started with this recipe and added some fish sauce, and some Lankato Monkfruit Golden sweetener as a sub for palm sugar.

I made a similar recipe from America’s Test Kitchen for my husband’s birthday (halibut for 6!), and yes, it is celebratory fish.
