I gave a talk this morning on how a lot of modern AI talk is a marketing veneer slapped on systems and algorithms and sensors we’ve been using for a long time, so I’m familiar with the marketing grift versus the reality. But I’m happy to fight the 2024 AI tech boys on their own epistemological turf.

OK pork fans, the cut is called "secreto", originally from Iberian Pigs from Portugal. It's comes from just above the pork shoulder. This is Heritage pork from Sonoma County Meat Co. Recipe is salt, pepper, garlic, & olive oil. Sear to 150 degrees, pull and let rest 15 mins. Slice and Enjoy!

Been a minute since I've posted some grilled steak action. Two Porterhouse and a Picaña strip. Recipe is dry brine 2 days in the fridge. Reverse sear method. Oven at 250 till internal is 100 and sear to medium rare. Rest 15 mins, slice and serve.

Here is the result of my 24 hr brined, 20 lb. bird recipe. Rinsed, dried, applied herb butter and olive oil. Stuffed with onion, celery, carrot and herbs. Started first 15 mins at 425 and dialed back to 325 till done. Very happy with the result.

Money shots of my Grilled Pichana with Chimichurri recipe. Grilled to internal of 124 and rested 20 minutes before slicing. Added grilled ciabatta sautéed onion and @faineg.bsky.social ‘s fréjoles. Shout out to Keller Market in Albuquerque for another amazing cut of beef! This was tasty!!

Tonight’s project and recipe is Grilled Pichana with chimichurri. Reverse seared at 275,till 100 internal. Now ready for the grill. Results in a later post!

Grilled pork steak recipe. Marinate in Mojo Cuban marinade 1-2 days. Grill on high to 165 internal. Pull and rest 10 mins. Serve with oven roasted rosemary potatoes and green beans. Tasty!

Results for Kurobuta Bone In pork chop recipe. See earlier skeet. Pink is good for this swine. They are grain fed so 145 int temp and 10 min rest is safe. If you are into grilling pork chops, try this! Flavor was f’ing amazing!

So change of plans and recipe. Upon further investigation on how to prepare Kurobuta, I’m just going to use salt, pepper, garlic, rosemary, thyme and olive oil. Applied and now letting it come to room temp. Going to sear and grill to 145 internal. 👍

Tonight’s project! Got a tip from a local Santa Fe restaurant where to get Kurobuta Pork. Recipe is to short brine (90 mins) then reverse sear the chop finishing on the grill. Brine is Apple cider vinegar, Cider, kosher salt,brown sugar & rub. Results skeet later.

This is the initial phase - vegetables (carrot/leek/onion/green onion/garlic) simmered with shrimp stock I made a while back and froze, with cognac/wine Will blend this with my immersion thingie then add cream in a minute + the sautéed crawfish and shrimp
making crawfish and shrimp bisque and expressing my cultural heritage by squeezing the tasty orange juice out of two pounds of whole shrimp

Monday project. Reverse seared T-Bone recipe. Start with 1.5 to 2” cut. Dry brine in fridge with favorite rub 2-4 days. Pull and 1hr later place in 250 deg oven. Pull when inside temp is 100f. Sear on hot grill or pan to int. temp of 125-130f. Rest for 20 mins. Cut and serve with sides. Enjoy!

Sunday night Grilled Chicken Thigh project. Simple receipe. Trim and cover with dry rub of choice. Let rest in fridge 2-3 hrs. Grill skin side up for 10 mins. Flip and sauce. After 10 mins flip and sauce. Grill to 170 degrees internal. Pull and rest for 10 mins. Easy!
