When I know I’m gonna have *a week*, I’ll buy a rotisserie chicken and eat make chicken sandwiches (with mayo and tomato, or in a wrap with hummus) for several days with the leftovers.
Also, hummus + olives. Labneh + zaatar + olives. Boiled eggs + zaatar, green onions, diced tomatoes, olive oil.
Microwave or instant pot or air fryer? Sometimes these appliances keep it cooler than the stove and oven. I’m making a corn salad later on in the week. And you can bake potatoes and boil eggs in the instant pot.
