A thing I love about being a writer is when I call an expert and say I'm writing a story about Their Job and can I come Tour The Thing and ask questions and they do some version of "I Also Grew Up On Mr. Rogers/Reading Rainbow, get your ass in here right now, yes"
People generally do like talking about what they do. It is flattering.
Interviewing for research instead of a deadline is usually more interesting. Plus, interviewees can point you to other resources you were unaware of before.
