I've made a pie or two every year for the past 30 years at least, and my crusts are still ugly as sin. But that's okay. I just cover the unsightliness with ice cream.
If crust toughness is an issue, you could try one of the crust recipes that uses cheap vodka instead of water. To my tastes I don't really like the results as much as traditional crusts but some people like it & it'll be tender.
Anyways it's fun to experiment
