I love sushi but rarely eat it out because of the cost and this bromakase nonsense. There are still good places in NYC which are not like that but I will refrain from posting my favorite!
@joshchafetz.bsky.social did you see this?
I saw it once. It was gross as you said. I got the strong feeling they weren't appreciating the artistry of the sushi making or the ingredients but were just there to ostentatiously blow a wad of cash because they could. It's the same bros who order wagyu sliders topped with gold leaf.
I don’t know about profit margins but problem w sushi in the 2020s is exorbitant cost + steep drop in quality. 300/400/500$ per person just for food is insane in my view, but less than pristine fish is a let down. For other cuisines, those prices pay for artistry/service not necessarily food quality
So I also love sushi but am less motivated to eat cheaper versions and there’s no way I’m paying those prices. The article is of course frightening and those places sound awful. But there are still plenty of serene civilized sushi temples in Nyc. Unfortunately they’re not affordable either!
No, thanks for posting! I have a favorite omakase place in DC that is not quite like this (although is definitely $$$$), but I recognize the phenomenon.
Josh: If you're in NYC, email me and I'll point you to the few places that are high quality but (comparatively) nonviolent pricing, and not bro infested because they are not "cool" enough.
