I make a salad that I saw in Bon Appétit with red onion, fried halloumi, mango or nectarine, some herbs (basil or mint), zaatar, and a balsamic pomegranate vinaigrette. It’s so good.

Do you know if it airfries? I'm thinking about getting an air fryer for that kind of thing, because I can't bear the smell of frying.

Halloumi is so good in the summer. We are just searing it and placing it on watermelon with a bit of mint, and it’s the perfect snack while drinking poolside.

I am also a big fan of a cucumber sandwich on toasted bread with mayo and lots of salt. 90% of my work lunches between now and end of August.

There’s a sicilian fresh tomato, basil, caper (plus a few more ingredients) pasta sauce that only requires boiling the pasta. One of my favorites for hot summer weather.
