Looks delish. Had a Peruvian chef once make me a super creamy quinoa in risotto style. This was about 15 years ago and he was marveling at Americans loving quinoa - poor food
But, like, po' folk food is amazing. It's the art of doing a lot with...iunno...whatever you can lay your grubby lil fingers on. It's the genesis of all American cuisine. Poor food is why there are 8 billion of us.
