Wow that looks good. I'm about to start cooking, gonna make a fire roasted red salsa and mexican fruit cups(melons, cukes, berries) with some Tajin and lime juice.
I use a recipe from Chefsteps ($) in the pressure cooker. Most of time is weighing out the 23 ingredients, including 6 kinds of dried peppers. Made vegan by swapping out butter.I also made the salsa verde with a Serious Eats recipe. Both of these were leftovers.
Cool, I'll have to check that out, like everyone now, have an Instant Pot. A lot of ingredients, I've seen it as high as many dozen, bless them. Serious Eats are my people. I make a roasted verde, sometimes with a some chipotle. Also do a raw verde.
