🍽️In celebration of #Mexico's victory over the French at the #BattleofPuebla (1862), I made queso flameado, something we used enjoy (at #Ninfas) when I lived in Houston.
Chorizo sausage, poblano pepper and Monterey jack served over a homemade #tortilla. I added avocado bits to smooth it out.
