Four nights in a row I have made tasty, nutritious meals that I planned ahead and actually bought ingredients for. Four nights! We've eaten at a reasonable hour, I haven't had to compost any vegetables. I even have eaten leftovers for lunch! I feel like I've earned a prize.

Meanwhile I'm making my child a second matzah pizza and that and a bowl of peas with Earth balance and pink salt is her dinner.

I made my usual tofu peanut curry, with onions, cauliflower, tomatoes, coconut, peanut butter, and coconut milk. Served over brown basmati rice. Tasty, easy, and 3 dinners of leftovers.

Looks delicious! Tonight I made a cauliflower parmesan Alfredo with spinach and lemon pasta. Last night I did tofu with fried brown rice and diced kale with a soy pear sauce.

You’re more ambitious than I; I can only work myself up to Big Cooking a few times a week. But it is cheaper, even when making something fancy.

I did a ton of prep on Saturday so nothing should take more than a half hour during the week. This comes after two weeks of ignoring food places and chucking too much groceries. My ADHD brain is satiated with the less steps.

I used a can of red curry paste with the garam masala, instead of the usual powdered yellow, and dumped in a handful of coconut. Both good innovations,

Great idea. Look red curry and garam masala. How do you incorporate the pb? With coconut milk???

Of course. It provides the liquid. I add it gradually to keep the tofu from sticking while I sear it.
