Do NOT drink raw milk. Do NOT eat soft raw cheese. Hard raw cheese is typically fine unless you're pregnant or immunocompromised, which is why it's legal and the other isn't. But DO NOT DRINK RAW MILK.

This is actually not true. Viruses are extremely tough. Common Flash pasteurization is not great. Some viruses can survive chemical and long pasteurization. They go dormant stage which is a little safer.

Yes. Shelf stable milk is ultra high temperature (UHT) pasteurized.

It’s a neat process. They super heat it for a few seconds then cool it a bit and slap it into in a sterile package. I’ve been in a few plants where they do this stuff and it always amazes me.
