Also not a criticism, just a funny little observance, Seth was pretending to call his Gran Gran, and had his hand like the first pick, where I like we'd use the second. Funny old thing life
There we have it gang, one lactose free mint chocolate chip gelato, in it's tub & back to the freezer for later. Very happy with the consistency of it, the arla lactose free range has made no difference to quality, just wish I had some different mint, not as minty as I like 😂 still it is delicious
Ok now we've left it the fridge for a few hours, we can start ice cream process, set it off and when it's like soft serve melt your chocolate, and add it to the mix, it'll freeze in little ribbons and pieces, then all we have to do is weight for it to finish!

Once it's thickened, should stick to the back of your spoon, time to strain, get all the solids out, and you're left with a lovely thick custard, now to leave to room temperature then chill for 3 hours

Second stage is to whisk egg yolks and sugar and add in the steeped mint mixture, once done back into the hob and stirring constantly on a low temp to get nice and thick

A series in which I chronicle the making of a lactose free mint chocolate gelato. I start by simmering milk and cream with mint, I bring this to a simmer and then let it rest for 45 minutes or so, get that lovely fresh mint flavour, it's a long job made up of very simple steps really
