Book early, and keep your indexer in the loop as deadlines firm up or slip away. We really would rather know, than be told the day we expect the work that it has moved back. Moving forwards is also possible.
"But unfortunately these are typically the least negotiable of the due dates you’ll receive." Authors ensure you ask at acquisition time who's responsible for hiring/paying for indexing. It's likely you. Start searching prior to, or at MS submission. Don't wait for email "due in two weeks"!
