Do you apply some sort of filter to your screenshots to make them look more CRT-y or something?

Are you actually taking a photo of a screen? That would explain why it... looks like a photo of a screen...

If it was a CRT there'd be a fat scan-line through it and half the image would look weird
I, too, have taken picture of a screen with my phone.

I recently got a shirt with this on it for my son. Every time he wears it, I find it newly amusing.
Just taking a photo off your phone will do that
Pretty sure this is an HDR (High Dynamic Range) screenshot. Most phones and many monitors can do HDR, which has more color information, but it looks a bit odd when on a non-HDR display
