would an XBox Series S be noticeably worse than splurging for the X/PS5, and do we think the CFB game will be fine on it?
If it's all you really plan to use it for, then it will run the game fine. If you think you might use it for more later, or want the best graphics, splurge on the X

The real answer isn't tech here. It's if you have people you want to play with online and if they favor one system over another. If you have more people on PS5 you want to online dynasty with, go with PS5. If more on XBox, go with whichever. No crossplay, afaik.
Basically the S can only do 1440p in best case scenario, but if you don’t care about gaming in 4K you’d be fine. I debated getting one versus playing on the PS5 Digital Edition we have and ended up passing just to save money
Some games have banged off the Series S' lower memory capacity (RIP Baldur's Gate 3 split-screen coop), but Madden hasn't been one of them from what I've heard, so CFB should be fine.
There’s a few things to consider, but the biggest is if you want access to used games and a 4k blu ray player. I would definitely recommend springing for the higher capacity series s at least, the expandable memory costs a fortune
