My snobbery: Rhubarb can easily carry a pie by itself whereas strawberry cannot. Strawberry should stick to its lane, which is shortbread, and stop butting into pie.

Try rhubarb ginger: you'll love it I peel & finely chop the ginger, leave it overnight in sugar to pre candy it as I do to rhubarb dices

My grandparents had a green apple tree in their back yard and a patch of rhubarb and there were such delicious pies as a result.

Strawberry cream cheesecake: Whip together 1 block cream cheese & 1 tub cool whip. Press mixture into store-bought shortbread pie crust. Cut 1 lb strawberries and toss with sugar. Top filling with the strawberries. Chill pie in fridge until set.

To my mind, tarts are in the pie family (crust and sweet filling). The crusts are different but similar feelings. 🤷🏾‍♀️

I agree, but a strawberry tart is made by baking a crust and then filling it afterwards. In a pie, crust and filling bake together. Rhubarb can stand up to that, strawberries can't. (aside: I really don't care about any of this, I'm just being pedantic for its own sake).

Sorry, I did a year of serious baking, including pies, and I remember tweeting against the use of the term "blind baking" pie crusts. There are many pies where crusts have to be pre-baked. And the French word for pie is tart. We can absolutely identify differences in practice, but that is not one.

dawg, they are better together. the strawberry rhubarb pie is an allegory for society at large. different fruits (or veg) have different strengths but together we can make magic.
