I am an int-caster with some dex as my build, so this boss was absolutely not designed for me. I ended up gambling on summoning a random human helper and eventually one clicked and the battle went really well.

By the way, if people are struggling with the final boss of the Elden Ring DLC, I found that using the Black Knife's skill will really help knock off a chunk of health at the start of the fight, which gives you more time with any of the buffs you cast at the start. Tiche can also STACK this effect!
